As a matter of fact, the oil starts to burn at about 248°F (120°C) [=smoke point/burning point]. The consequence is an unpleasant smell and the taste of the delicious oil turns bad. Moreover, the valuable nutrients get damaged with increasing temperatures, what we really don´t want.

Why shouldn´t I cool Pumpkin Seed Oil under about 46°F (8°C)?
It is true, that the oil stays fresher and maintains its healthy nutrients longer when it is stored cool. Nevertheless, this is only true until a certain point. Firstly, Pumpkin Seed Oil should never freeze which comes with about 3°F (-16°C). Secondly real Pumpkin Seed Oil can flocculate when it gets to cold. When it flocculates parts of the nutrients clump together into a floc. The floc may then settle to the bottom of the bottle, which is visible with the naked eye. If this happened don´t worry! You still can use the oil, though the awesome clean pumpkin seed oil taste with the kind nutty aroma probably will be gone.
Why should I always close the bottle after using it?
This is because of the air, precisely because of the oxygen. Oxygen is one of the major factors why Pumpkin Oil turns bad. Further factors are hot temperatures and direct sun light. If a bottle is closed always well and stored under preferably constant temperatures between 50°- 64°F (10°-18°C) it will last fresh for much longer then the officially stated minimum durability of 1 year.
How do store the oil correctly?
All in all, store your oil at a cool place with optimally constant temperatures between 50°- 64°F (10°-18°C) or protect it at least from heat. At a dark place, precisely without direct sunlight. And keep the bottle closed. You should use an open bottle in approximately 3 months up, depending on the conditions it is stored.

What is the minimum durability of the product?
The official stated minimum durability for our Styrian Pumpkin Seed Oil P.G.I. is at least one year from the date on it was pressed. We try to press our Pumpkin Seed Oil always as fresh as possible. Nevertheless, if the Seed Oil is stored under optimal conditions, meaning at a cool constant temperature, but not to cold / not in the fridge. At a dark place without direct sunlight and closed. It stays much longer fresh and fit for consumption then this officially stated one year.
